Here is a recipe for Rejuvelac, a fermented drink that we use a lot these months when our body needs a little extra while waiting for the sun.
Rejuvelac is a cheap and powerful way to get lactic acid bacteria. Choose a crop. For example, whole oats, whole buckwheat, wheatgrass. Soak 1 dl and then sprout. It takes about 2 days. When the sprouts have a visible tail, put them in a large glass jar (1 L) and add a liter of water (that you have boiled and let cool) and a little honey. No lid, but protect the contents by covering with a towel. Place the glass jar in a dark place for another 2 days.
When it's done, it's a little bubbly. The smell should be fresh, sour, a bit like yogurt.
Cleanliness is everything. Clean hands, clean utensils and clean water. Otherwise, the wrong kind of bacteria can grow. You can easily tell by the smell (we promise 😦).
It takes a little time, but it feels good in your stomach. And it's cheap to make your own probiotics. In the picture we've used whole buckwheat.
