Mushrooms are something we at Örtfabriken have been trying to incorporate more into our everyday lives in recent years. Mainly because mushrooms are rich in nutrients and have interesting properties for us humans.

There are many more edible mushrooms to choose from in the store these days. Not just mushrooms and chanterelles. For example, Shiitake. They are so good when sautéed with a little garlic. A perfect snack. So good. Lots of umami flavor. However, it must be added that they are not appreciated by everyone, strangely enough - our taste buds think so.

Or Oyster mushroom. Make patties from oyster mushroom and zucchini (chopped into small pieces) and a little salt. Shape into small patties, roll in a little buckwheat flour and fry on low heat for a long time. Crispy and delicious. ⁠

Edible mushrooms contain a lot of nutrients. For example, vitamins and fiber. All mushrooms contain ergosterol, a substance that can convert to vitamin D2. All mushrooms also contain beta-glucans, which are a type of fiber. The amount of beta-glucans varies greatly between different types of mushrooms. But both chanterelles and mushrooms have their share.

The so-called functional mushrooms (Mushrooms or fungi are other names) have become increasingly interesting. In our own latitudes we can boast of Sprängtickan or Chagan. Reishi, Ganoderma lucidum also called the immortality mushroom , is another mushroom that many people recognize and which is widely used in traditional Chinese medicine. A mushroom that is on the list to try by us at Örtfabriken is Lion's mane, which in Swedish is called Egelkottstaggsvamp.
