Here we share an overview of our most important functional mushrooms. Most of these mushrooms, which do not quite fall into the edible mushroom category, are somewhere between supplements and foods. Here we have included Chaga, Reishi, Lion's Mane, Oyster Mushroom, Cordyceps and Shiitake.
Mushrooms are incredibly nice to add more of in our everyday lives. They contain so much nutrition, fiber in the form of beta-glucans and antioxidants. In the picture you see, for example, Shiitake and Oyster mushrooms, which we use a lot in our cooking. With Oyster mushrooms it is easy to fill out our vegetarian steaks. In other words, they replace meat in an excellent way! Finely chop the oyster mushrooms together with zucchini. Add salt and pepper. Maybe a little flour. Shape into small steaks and fry for a long time on low heat.
All mushrooms need to be heated. If you make a decoction of, for example, Reishi, it needs to simmer under a lid for a long time. Then you can drink your decoction (or your tea, for simplicity's sake). This helps our digestion, and it is the only way for us to absorb the active substances in the mushroom.
